Our family absolutely loves to cook in a slow cooker. So when we got the opportunity to try the new Crock-Pot we were elated! So I wanted to also share a recipe with you all that came straight from the Crock-Pot Cook Book. We used an older cookbook that we have used for years.
Now I will let you know that when using the Express Crock, you will need to add at least 8oz of liquid along with your ingredients if it doesn't call for it. If you do not, then the Express Crock will turn it'self off.
So now for that delicious recipe 💖
I had to improvise some of the ingredients because I didn't have exactly what it asked for but I will put the recipe exactly how it states in the book. This is not my recipe and I do not take credit for it but I will tell you, it turned out delicious and the family loved it!
Vegetable-Overstuffed Pork Chops
This makes 4 servings
Prep time 20 minutes
Add the 8oz of liquid to the pan
1 Can kernel corn, drained
1 1/2 cups chopped green bell pepper
1/2 cup chopped yellow onion
1 cup Hungry Jack mashed potatoes
1/2 cup uncooked long grain rice
1 tsp dried Oregano leaves
3/4 tsp salt
1/8 tsp dried pepper flakes
4 thick pork chops, about 1in thick, trimmed of fat, split for stuffing
Crisco no-stick cooking spray
1/2 tsp ground Cumin
1 cup mild Picante sauce
chopped cilantro, optional
1 medium lime, quartered, optional
1. Combine corn, bell pepper, onion, Hungry Jack mashed potatoes, rice, oregano, salt and pepper flakes in medium bowl. Toss to blend. Stuff each pork chop with about 1/2 cup veggie mixture. Sprinkle with Cumin.
2. Lightly coat crockpot with cooking spray. Place remaining veggie mixture in crock-pot. Arrange pork chops in accordion-fashion on the veggie mix. Pour Picante sauce evenly over all. Cook on low for 4 1/2-5 hours or until tender.
3. Remove chops and place on a serving platter. Spoon veggie mix around chops and garnish with Cilantro and lime juice if desired.
With the Crock-Pot Express Crock, I added 8oz of water and set the timer for meat/stew. It took about 35 minutes and we had a delicious meal the entire family couldn't get enough of. The pork chops were so tender that we didn't even need to use a knife to slice through them. Now my chops also didn't turn out as pretty as the book shows but the recipe was divine.
