Garlic Parmesan Chicken....Slow Cooker Style!

Garlic Parmesan Chicken

I Hardly ever have time to cook because I work a lot of hours, So the Crock-Pot has become my best friend! I love that I can throw everything I need into it and by the time I get home from work, dinner is almost complete!

I am also a big fan of cooking with Garlic, so anything I find that includes it is an absolute plus for me. I found this amazing recipe on Delish and just had to share it with you. I just wanted to give credit where credit was due!

First off you want to gather the ingredients:


You will need
1/3 cup plus 2 tbsp extra virgin olive oil
2lb. bone-in chicken thigh
kosher salt
freshly ground black pepper
1lb baby red potatoes, squared 
2 Tbsp butter
5 cloves of garlic, chopped
2tbsp chopped fresh thyme
grated parmesan, for serving
chopped fresh parsley, for serving

Directions:

In a large skillet over medium-high heat, heat oil (1/3 cup). Add chicken, season with salt and pepper, and sear until golden, 3-4 minutes, then flip and sear 3 more minutes.

Meanwhile, in a 6-quart slow cooker, toss potatoes with olive oil (2tbsp), butter, garlic, and thyme. Season generously with salt and pepper. Add chicken to slow cooker and toss gently, then cover and cook on high for 4 hours or low for 8 hours, until potatoes are tender and chicken is fully cooked.




Garnish with parmesan and parsley serve and enjoy!

Add your favorite vegetables and maybe a pasta salad on the side and you have a wonderful meal for the whole family!

  2. I just made a crockpot dinner two day ago. I threw in chicken wings, diced tomatoes, carrots, celery, onions, and green peppers. It was served over rice. I will pin your recipe to try later because it looks delicious.

  25. I cooked your pancakes with my son just this morning! He spilled the almond milk all over the counter and dropped about 4 eggs, but it still worked and he was having fun with me rather than just plopped in front of the tv while I was alone in the kitchen!
